Decadent Chocolate Fudge Cake
Fact no. 1: I have a thing about food textures.
Fact no. 2: I’m not crazy about chocolate.
So keeping those things in mind, hear me when I tell you that this recipe for Decadent Chocolate Fudge Cake is GOOD! So much so that I’m about to have to put the rest of it that wasn’t eaten from Christmas Dinner into the freezer because it keeps calling my name. THAT is why I only make desserts for special occasions. They’re like Lays potato chips … I keep returning back to them. Yes, sadly, I could never work in a bakery.
The Decadent Chocolate Fudge Cake may not be for everyone, however. You’re totally bombarded with chocolate and the cake texture itself is moist but DENSE. Very, very dense. I did totally go against the advice of the recipe and leave out the coffee and use water instead because I hate the taste of coffee. But I read that the taste of coffee is added to just enhance the chocolate flavor. That’s ok, I didn’t need that … I’m good, thanks. And I loved the thick, dense texture of the cake where that might not be for everyone. Some people might like only light, fluffy cakes. So do be warned. This is so not that style of cake. I, myself, probably would not have liked a light and fluffy chocolate cake. That thick, dense texture is probably the only thing that saved this chocolate cake for me.
And the frosting … I thought as I was making it that it would be a total flop, but it wasn’t. It was just right. Not too much or too little. So don’t panic. It will all turn out just fine. 🙂
My daughter’s review: It was good. She liked the frosting, but I think the cake was a little too dense for her.
Oh, and a last note: my cake was actually 3 layers. I didn’t have 9 inch cake pans so I made three 8 inch cake layers. Worked out perfectly.
You can see in this slice, the dense, chocolatey, yummy goodness of this cake. And don’t make the mistake of leaving off the chocolate bits on the top. I thought that was the best!
