Happy Monday, everyone! 🙂 Yes, I know … but for me it’s just another Saturday! Love it!
Chris and I spent the weekend entertaining guests and the guest of honor loves chocolate. So I tried a recipe from Pinterest for Brick Street Chocolate Cake.
I’m not much for chocolate anymore, especially chocolate cake. But, this chocolate cake was not one to disappoint. Even I loved it.
I have a thing for textures. And I could tell when peering down into the mixing bowl after mixing all the ingredients together for this cake, that it’s texture was going to be different. The batter itself was light and fluffy, but the cake came out so dense and moist. YUM!!!
And if you’re a chocolate lover … this is a chocolate lover’s dream. Chocolate batter containing chocolate pudding and chocolate chips topped with chocolate ganache. Very chocolaty! (you can even see the chocolate chips in the cake above)
My chocolate loving guest loved it and I even sent him home with some to enjoy later.

Well here it is. The only changes I made were this:
*the grocery store was out of cake flour so I substituted 1 3/4 C all purpose flour and 1/4 C cornstarch for the first 2 C of cake flour. For the 1/2 C, I just sort of guessed at the proportions for those two ingredients. (almost 1/2 C all purpose flour and then finished it off with cornstarch)
*I used just a little less than 1 T of cream in the ganache. I wanted it thick, not thin.
*the recipe said to use a tube pan which I didn’t have so I used a Bundt pan and used the toothpick test to check for doneness
*it also said to fill the center with ganache first then put the rest on the sides. I did the opposite. I didn’t care how much was in the center, but I wanted to make sure there was plenty on the top and sides.
Note: Not ever having made/used ganache before, I was worried about what was actually going to happen with all that chocolate in the center when we cut the cake. No worries. It thickens and stays put. In my mind, I worried that we’d cut the cake and a fountain of chocolate would rein down all over the counter top.  Of course, I thought about this AFTER I filled the center with said chocolate!
So, if you love cake with a super moist, dense texture … and even if you might not be a chocoholic anymore, give this awesome cake a try. I almost guarantee that you will love it.
